You're out during the hottest part of the day, which sounds like a downside until you're in the sea — that's exactly when swimming and snorkelling are at their best. The water is at its warmest, the light is clear underneath, and you can get in and out all day without ever feeling cold.
The other advantage nobody mentions: your evening stays free. You come back with the whole sunset still ahead of you, so you can shower, change, and watch it properly from a restaurant terrace or a caldera viewpoint. You get both halves of the island in one day instead of choosing between them.

After that the water starts to feel noticeably chillier as the day cools off, and most people are out of the sea and up on deck with a drink. So if swimming is your priority, the sunset trip will disappoint slightly. If the view is your priority, nothing beats it.
