Ranked honestly, not by who pays the most. Free things are on this list too — because some of the best days here don't cost anything.
Most "things to do" lists pad themselves out with whatever sells. This one doesn't. Below are the fourteen experiences I'd genuinely point a friend toward, roughly in the order I'd do them — a mix of paid tours, free walks and the small moments that make the island worth the trip.
Caldera sailing tour
A half-day catamaran around the volcano is the single best thing you can do here. You see the island's true shape, swim off the boat, and float over the hot springs. Book a small group, not the big cruise boats.
Walk Oia at dawn
Oia is genuinely beautiful — just not at sunset, when thousands fight for the same view. Come before 8am and the marble lanes are empty and golden. It's free, and it's the version of Oia worth photographing.
Sunset catamaran
If you only do one sunset, do it from the water. Most include dinner and drinks on board, you swim in the late light, and you watch the sun drop behind the caldera with a glass in hand instead of an elbow in your ribs.
Fira to Oia caldera hike
The classic walk along the cliff rim, around 10km past Firostefani, Imerovigli and the chapels. It takes three to four hours and the views never stop. Start early to beat the heat and bring more water than you think.
Wine tasting at Santo Wines
The big clifftop winery is touristy, but the Assyrtiko is excellent and the terrace view over the caldera is hard to beat. Go late afternoon, order a flight, and let the volcanic whites do the talking.
Local food tour in Fira
A guided walk through the island's real flavours — fava, tomatokeftedes, white eggplant and local cheese. A good tour explains why Santorini's food tastes the way it does, then feeds you well. Worth it on your first day.
Pyrgos village at sunset
The locals' alternative to Oia. Pyrgos sits on the highest hill on the island, with a quiet old castle at the top and views across the whole caldera. Fewer crowds, better tavernas, and a sunset you don't have to share.
Greek cooking class
Spend a morning learning to cook the dishes you've been eating all week. Most classes use local produce and end with a long lunch you made yourself. A lovely rainy-day or rest-day option, and you take the recipes home.
Akrotiri archaeological site
A Bronze Age town buried by the volcanic eruption and remarkably preserved — Santorini's own Pompeii, under a modern roof. Cool, shaded and genuinely fascinating. The single best thing to do on a hot afternoon.
Perissa vs Kamari beach day
The two big black-sand beaches on the south coast, separated by a mountain. Perissa is younger and more laid-back, Kamari a little more organised. Pick one, grab a sunbed, and let a slow taverna lunch fill the afternoon.
ATV tour around the island
A guided quad-bike loop is a fun way to reach the spots buses skip — lighthouses, hidden beaches, inland villages. Go with a group if you're nervous on the roads, wear closed shoes, and never ride it in flip-flops.
Imerovigli caldera walk
Imerovigli sits at the highest point of the caldera rim, above Fira. The short walk out to Skaros Rock gives you huge views with a fraction of Oia's crowds. Perfect for a calm late-afternoon stroll before dinner.
Ammoudi Bay seafood lunch
Walk down the 300 steps below Oia to a tiny fishing port lined with seafood tavernas right on the water. The fish is as fresh as it gets on the island. Go for lunch, take your time, and taxi back up if your knees protest.
Volcano & hot springs tour
A boat out to the volcanic islets in the middle of the caldera, with a short hike to the crater and a swim in the warm sulphur springs. A bit rough underfoot and the water is murky — but it's a genuinely unusual half-day.
